Dear Customer,
Cliffe our accountant made a really delicious soup last night. I would
definitely add the blue cheese at the end. In his words:
Simple Courgette Soup
Gently sauté an onion and a couple of cloves of crushed garlic
in butter or olive oil until soft. Add 500gms roughly chopped courgettes
and cook gently for 5-10 minutes, stirring occasionally. Add a pint of
vegetable stock and ¾ pint of milk and bring to the boil, reduce
the heat and simmer until the courgettes are soft (10-15 minutes). Liquidise
(or push through a sieve) and return to the heat to warm through. Add
salt and pepper to taste and serve. For a thinner soup add more stock.
Try adding some crumbled Stilton at the end for a rich cheesy flavour
or a little fresh mint when liquidising and serve chilled.
Here is a recipe from a friend in the US for "Rhubarb Ketchup"
I have had to do a conversion from the US to Metric/Imperial so beware!
4 cups diced rhubarb (948 ml)
3 medium onions; chopped
1 cup white vinegar (237 ml)
1 cup white vinegar (237 ml)
1 cup sugar (237 ml)
1 qt tomatoes; cut up, saving liquid (2 pints)
2 tsp Salt
1 tsp Cinnamon
1 tbl Pickling spice
Combine; cook until thick. Cool. Store in refrigerator. Give to the children
and tell them Heinz has gone bust !!!!
The rhubarb in the fruit bags is from Mike Smales of Lyburn Farm in the
New Forest.
I hope you like the Kestrel potatoes that are in the bags at the moment.
They are from The Wards in Sandhills, Canterbury. The Kestrels are a lovely
creamy potato with purple eyes - ideal for all uses and especially good
baked. It is hot, dry and dusty on their land at the moment but there
is still moisture deep down in the earth. In two weeks time they will
have the first sweetcorn, marrows and squash followed by french beans.
Mike and his son Andrew have been growing for us for many years. They
also run a small haulage company of five lorries to subsidise the farm
- running loads of fruit and animal feed around Kent and Sussex.. Their
passion is sailing and they have a 26ft yacht moored in Ramsgate harbour.
Every evening when all the work is done and whatever the weather, they
sail out to sea.
